Hi all!
I wouldn't want to wear an arming doubled with puffed shoulders under a sleeved mail shirt. I have worn armour of an earlier type (14/15 cent)- with mail on a gambeson under a quilted coat of arms as a main torso protection and, believe you me, puffs wouldn't help at all. Putting on and taking off mail is no fun at all. However, I've read about sewing mail into doublets. In such a case puffs wouldn't make any difference.
